Preparation

1. Start cleaning the chicken skin by scraping the excess fat off the back. Then, cut the skin into bite-size pieces.
2. Wash the scraped skin with salt. This will help reduce the sliminess and odor of the skin. Massage it for about 2 minutes and then rinse with clean water.
3. Spread the skin out on a rack to drain.
 
How to Marinate
1. To pound the saamkler (three spices) with the lemongrass, start by adding the coriander root, garlic, lemongrass and pepper into a mortar. Pound until you get a fine saamkler paste for marinating.
2. Add the chicken skin and the saamkler paste into a bowl, followed by the seasoning powder, sugar, oyster sauce and seasoning sauce and mix until well combined.
3. Mix in the tempura flour, clear limewater and cold water to make the fried chicken crispier.
 4. Marinate the chicken skin for about 20 minutes in the refrigerator. Then, fry it using medium heat, stirring occasionally to evenly distribute heat.
