Preparation

1. Clean inside and outside the duck, abserb to dry 
2. Preheat a pot for duck coloring sauce, add everything when the water’s boiling, apply the cooked coloring sauce all over dried duck
3. Blend other ingredients altogether, then apply it on duck all over, skewer its bottom to prevent the water inside a duck out while grilling 
4. Hang the duck to dry its skin in ventilated room or using a fan as assistance helping it for dried skin, for 2-3 hours or till its skin dried 
5. Bake it in an oven at the temperature of 150 c for  1.30 hour
6. Take the water out of the duck in container when it’s cooked
7. Preheat a pot for grilled duck sauce, add every ingredient till it’s boiling, add starch that has been melted slowly, frequently simmer 
8. Making grilled duck dipping sauce by mix every seasoning ingredients altogether, heat a pan to melt the sugar, chop bell peppers in horizon, and can be served instantly 
9. Serve it with applying grilled duck sauce with side dish like marinated ginger, sprinkle with spring onion and dipping sauce
