Create Western Menu Items, Heaven for Meat Lovers!

Jun 28, 2019

This Makro HoReCa workshop offered an opportunity for entrepreneurs to learn how to cook Western fusion food and techniques on how to use only a few ingredients to create many menu items. The event was led by Chef Daniel Althaus, an expert in Western cuisine.

 | The Chef said that the main ingredient in Western cuisine is beef and that beef could be used to create simple menu items by combining Mexican and European food ideas. Each menu item did not require a large ingredient stock because the Chef thought that regular restaurants with limited kitchen space could not stock large quantities of ingredients. In addition to using small amounts of ingredients and being low-cost, the ingredients could also be purchased easily at Makro, and dishes were arranged attractively and luxuriously to effectively add to their value. Furthermore, entrepreneurs were taught to apply the cooking knowledge and techniques they learned and create new menu items for their own restaurants. Before beginning the preparation of the first dish, the Chef taught participants how to prepare a basic meatballs mixture meatballs and Mexican spices to use as key ingredients in the following dishes:

| Mexican Ground Beef with Potato WafflesIt's a Mexican and Irish fusion dish in which beef is stir-fried with Mexican spices, mashed tomatoes and kidney beans to produce just the right amount of spiciness. Served with hot potato waffles, it could be eaten with sour cream to create a contrast with the spiciness of the beef for great and even flavors.

| Mexican Meat Paddy with Tzatziki Sauce This Mexican and Greek fusion dish used meatballs flavored by cheese and Mexican chili. There's no need to worry about the dish being too spicy, because it's to be eaten with tzatziki sauce made primarily from Greek yogurt.

| German Cottage Cheese MeatballsThis German dish was easy to prepare and both children and adults could enjoy it. Meatballs were mixed with cottage cheese and mustard and made into small bite-sized pieces, placed on salad vegetables and finished with sesame salad dressing and can be served with French fries, which effectively increases the value of this dish.

| German Meatballs with Truffles and Bacon This French-style dish contained meatballs and truffle sauce wrapped in large pieces of bacon, so its fragrance should attract people from afar. Placed on rocket lettuce, the dish can be was served on main dish, covered in gravy and mashed potatoes.   The atmosphere of the event was fun. Although the Chef was foreign, he could speak Thai, and even though he stumbled sometimes the host was present to help give explanations, so the event was really colorful. Makro employees attended participants at every table and gave close supervision in preparing the workshop menu items. The smell of each menu item served as a great attraction for the people buying things at Makro.

| After the workshop concluded, Mr. Baramee Panichayanukroh, owner of The Top Grill Restaurant, shared his experience with us as follows:"Today I learned about Mexican food and the new ingredients and menu items the Chef taught us about.  And I'll be able to apply what I learned today in my own restaurant. That's because I sell both Thai and Western foods, and I can create some new dishes at the restaurant."

| Additionally, Ms. Aporn Katakul, the owner of Aunty Eain's Curry Restaurant in Nakhon Si Thammarat, said, "I learned new and interesting things about Western cuisine, and I even got to cook myself, so I could apply what I learned to my restaurant and sell new menu items like the German meatballs with cottage cheese, which is easy to make and kids would probably enjoy."  Great events like this one are held year-round in a rotation through different Makro branches nationwide, so entrepreneurs who don't want to miss out on these activities should follow the news on this website.
