The blended bitter-sweet fragrance of coffee has made it one of the most popular beverages worldwide. Thus, coffee shop owners should never neglect the importance of coffee bean purchasing, because great coffee beans enhance the smooth flavor of coffee and make your coffee shop stand out from the rest.

  1. The relationship between coffee machines and ground coffee beans

What are the different coffee varieties?

Now that you know the techniques for selecting coffee beans based on looking at its external appearance, let’s learn about the properties of each kind of coffee, which has a different flavor, texture and richness. Let’s learn about the four different varieties of coffee, so you can better decide which coffee beans to buy for your coffee shop.

 
Arabica – This coffee variety has long been discovered and cultivated. The areas that produce high-quality Arabica coffee should be high-altitude and cool. That’s why we can usually find Arabica coffee grown in the northern region of Thailand such as in Chiang Rai, Chiang Mai and Lampang. When roasted, this coffee produces a unique fragrance that is just right along with its relatively smooth flavor. It also has a low caffeine content, at less than 2%. Because of its low caffeine content, Arabica is the most popular and best selling coffee in the world.

2.Robusta – This is the second most popular coffee variety worldwide after Arabica. Its beans are quite turgid and its split at the middle is straight. Robusta is grown in a totally different area from Arabica in that it is grown in low basin areas. In terms of aroma, it has a rather pungent smell when roasted. Its flavor is also richer and bitterer, as its caffeine content exceeds 2%. As a result of these characteristics, Robusta is often made into instant and 3-in-1 coffee.
Following the above varieties are Excelsa, which is popular among Africans and has a richer and more bitter flavor, and Liberica, which has a similar flavor to Arabica, but with the added sweet-and-sour flavor of berries that make it popularly used for special preparation or mixed with other coffee varieties.
Do most coffee shops prefer Arabica or Robusta?

Commercially speaking, no coffee bean is superior to another. The coffee beans selected by each shop depend on the customers and menu items involved. As 100% Arabica has a strong fragrance, it is suitable for hot coffee or mildly flavored cold coffee, with an international recipe. However, for shops that emphasize cold coffee with rich flavors, heavy coffee body is needed, so Arabica and Robusta are mixed to produce flavors that better appeal to customers’ preferences. In any case, the mixing ratio depends on the preferences and cost of each shop.

For the most part, the fresh coffee we drink nowadays consists of the following two varieties:

– 100% Arabica (Arabica alone without any Robusta)
It might be blended on a single level, or it might have different blending levels.




 – Blended Arabica, that is, blended with Robusta according to a ratio (Arabica mixed with Robusta)
It might be blended on a single level, or it might have different blending levels.

Now, in addition to knowing about how to select coffee beans, another important thing to know is about roasting levels. In general, shop owners can opt for pre-roasted coffee for grinding and use at the shop.

Different Levels of Coffee Roasting

Roasting is equally-important to other processes. The flavor of coffee can be made better or worse based on roasting. Roasting is what controls coffee flavor. In other words, it is at the heart of coffee making. This is because coffee beans do not naturally have any flavors or fragrances, so we cannot smell anything from raw coffee beans. Roasting is like story-telling. It draws out the distinguishing fragrance of coffee as much as possible. As coffee beans are heated, transformation occurs inside the beans. In particular, oil is emitted, and chemical reactions take place inside to produce much of the coffee fragrance we know and love.

Coffee-roasting in Thailand can be broadly divided into the following three levels:  light roasting, medium roasting and dark roasting. The level of roast coffee influences tanginess, sweetness, bitterness and fragrance. The levels are described as follows:

  1. Light roast, half city or cinnamon roast – At this level of roasting, coffee beans have a light-brown color similar to the color of cinnamon. At this level, the natural qualities of coffee such as sourness, freshness and astringency are highly retained, making beans roasted at this level and suitable for hot coffee (such as espresso and americano).
    2. Medium roast, full city, or American – At this level of roasting, coffee beans have a medium-brown color that is darker than light roast, but not black. At medium roast, the flavor is bittersweet and slightly tangy, which makes it great for hot and cold coffee. When made into hot coffee, the flavor is less tangy than light roast, and when made into cold coffee. It is not as rich as dark roast. This roasting level offers a smooth, even flavor.
    3. Dark roast, continental roast, or Vienna roast – At this level of roasting, coffee beans have a dark brown color with a slightly bittersweet flavor and no tanginess. In addition, the coffee has a pungent, yet fragrant, aroma, making this level great for cold coffee blends requiring rich flavors or strong coffee texture. This level is best for cold espresso as the coffee might be too bitter for other blends.



You can now see that roasting is at the heart of coffee making and produces different flavors and fragrances of coffee. After all of the other processes once you’ve reached the roasting stage, it becomes the final process for enhancing flavor and maximizing the quality of your coffee.
