  • 1 tbsplime juice ( (tom yam pork noodle soup, 1 serving))
  • 200 mlbroth((tom yam pork noodle soup, 1 serving))
  • 30 g garlic((marinated minced pork))
  • 10 gpepper((marinated minced pork))
  • 10 gsalt((marinated minced pork))
  • 200 mlbroth( (clear pork noodle soup, 1 serving))
  • 1 tspcoriander( (clear pork noodle soup, 1 serving))

Preparation

1. Bring a pot of water to a boil. Add the Rosdee noodle soup powder.

How to Make the Marinated Minced Pork
1. Slice the coriander roots and garlic. Pound them together and add pepper. Pound the mixture into a fine paste. (Making it into saamkler.)
2. Slice the pork hip and pork fat into small pieces. Then, chop them together into one mixture.
3. Add the chopped pork into the mortar with the saamkler. Season with cornstarch, salt, baking soda, seasoning sauce, white soy sauce and egg whites.
4. Pound the ingredients into one sticky paste.
5. Spread the marinated minced pork onto a ladle. Dip the ladle into a pot of hot water. Soak until the pork peels off from the ladle and then let it boil until cooked.

How to Make the Clear Pork Noodle Soup
1. Poach the meatballs in a pot. Boil the thin noodles and bean sprouts until they’re cooked and then put them in a bowl. Add the marinated minced pork and meatballs.
2. Season the dish with fried garlic, sliced green onion, fried pork rind and ground pepper. Add the broth to get clear pork noodle soup.

How to Make the Tom Yam Pork Noodle Soup
1. To make tom yam pork noodle soup, boil the rice vermicelli and bean sprouts and put them in a bowl.
2. Make the tom yam broth by mixing together poached minced pork, fried garlic, sliced green onion, coriander, fried pork rind, ground peanut, ground chili, granulated sugar, lime juice and meatballs.
3. Add broth to the mixture and mix. Pour the tom yam broth onto the cooked rice vermicelli and serve.
